Dorotheria Manuel
Owner & Chocolatier
With over 14 years of experience working in restaurants as a pastry chef/baker, Dorotheria is the one-woman team behind DOMA Chocolates. Her dream of owning a chocolate shop started in 2015, when a work-related injury would sideline her for months. Needing to keep herself occupied, she completed Ecole Chocolat's online Professional Chocolatier course.
Five years later, the COVID pandemic threw her another curveball - losing her job left her with a lot of spare time. Not wanting to go the "make sourdough bread" route, she decided to create DOMA Chocolates in 2020. Selling chocolates from her tiny apartment made her realize that owning a tiny chocolate shop could actually work.
Now, Dorotheria has been a vendor at local markets & pop-ups since 2023. Heavily inspired by art, pop culture, and her own culinary journey, she makes artisanal chocolates with a vibrant color palette and a hand-painted aesthetic. Combined with an "anything goes" approach to flavor pairings and textures, she's constantly inspired to create new flavors for her steadily growing loyal customers.
